Strawberry-Coconut 90% Raspberry Protein Muffins




Ingredients:

  • 1 scoop Weider 90% Protein Raspberry Powder
  • 4 oz. toasted coconut
  • 16 oz. bread flour
  • 1 1/2 cup sugar
  • 2 tablespoons baking powder
  • 1 tablespoon salt
  • 2 cups milk
  • 2 large eggs
  • 1/2 cup olive oil
  • 1/2 teaspoon vanilla
  • 9 oz. strawberries, hulled and chopped



Directions:

  1. In one bowl, mix the raspberry protein powder, coconut, flour, sugar, baking powder and salt together. In a separate bowl, mix the milk, eggs, oil, and vanilla together.
  2. Fold the berries into the flour mixture. Add the liquid ingredients and stir until just combined.
  3. Fill greased muffin tin 2/3 full of mixture and bake at 400° for 15 minutes, or until done.
