90% Protein Pancakes




Ingredients:

  • 1-2 scoops Weider 90% Protein powder 
  • 5 egg whites 
  • 1/2 cup rolled oats
  • 1 tsp baking powder 
  • 1 tsp vanilla 
  • 1-2 packets of artificial sweetener or stevia
  • Cinnamon (to taste) 



Directions:

  1. Mix all ingredients together well
  2. Pour pancake size dollops onto a heated pan, turning over once, after the bubbles on top have popped.

Alternatively, you can add 1 scoop 90% Protein powder to a low fat whole wheat and honey pancake mix.

  Limitations: Oats don't cook, so has chewy bits Far too thick to be cooked when prepared as directed. Burns quickly. Fixes:Add 1/2 cup apple sauce + 1/2 cup milk. Cook over medium-low heat, with cooking spray. With two scoops of protein powder and additions above (plus use of 3 eggs instead of 5 egg whites), nutrition data is as follows for 1/4 of the recipe (~2 pancakes): Calories 160 Total Fat 5 g Saturated Fat 1.5 g Polyunsaturated Fat 0.9 g Monounsaturated Fat 1.7 g Cholesterol 140 mg Sodium 390 mg Potassium 257 mg Total Carbohydrate 9 g Dietary Fiber 1 g Sugars 4.5 g Protein 20 g Sugar can be reduced by using another liquid in place of the apple sauce. Also consider whole wheat flour in place of oats, or oat flour instead of whole oats.
