Baked Scotch Eggs
Ingredients:
This is a much lighter version of traditional Scotch Eggs (which are typically made with sausage and deep fried)
- 2 teaspoons flour
- 1 teaspoon salt
- 2 teaspoons freshly ground black pepper
- Paprika
- 3 hard boiled eggs, shelled
- 1 drop hot sauce (to taste)
- 1/2 pound lean ground turkey
- 1 egg beaten
- Bread crumbs
Directions:
- Preheat oven to 350.
- Season flour with salt, pepper and paprika then roll shelled eggs in flour.
- If adding hot sauce, add it to the ground turkey and then divide into 3 equal parts.
- Cover each egg as evenly as possible to keep egg shape.
- Brush with beaten egg then roll in bread crumbs then bake 35 minutes.
